Butternut Squash Bisque with Goat Cheese

Preheat oven to 375 F, Slice butternut squash in half remove seeds,
Lay flesh side up on aluminum foil line sheet pan, Brush on 1 Tbsp Olive Oil, season with salt and pepper, Place in oven roast for 1 hour or until fork tender
Remove from oven cool for 20 minutes
Scoop out flesh. If it is being stubborn the you can easily peel it off with a veggie peeler at this point.
In a stock pot place remaining olive oil heat on med heat
Add onion season with salt cook for 10 min or until translucent
Add in squash and remaining ingredients except goat cheese .
Bring to a slight boil reduce heat to low and simmer for 20 minutes stirring frequently from the bottom. The squash likes to stick to the bottom of the pan.
Using an immersion blender blend until smooth.
Add in goat cheese blend until smooth with blender again.
Check seasoning and serve
